Hidden Vegetables Apple Muffins

Are you struggling to get the kids to eat their veggies? These deliciously sweet breakfast muffins contain not one, but two high fiber green veggies, sneakily hiding behind the sweet apple cinnamon flavor. The ingredients list looks long, but the method is simple and quick.

The addition of fresh apples allowed us to lower the amount of brown sugar that went into it, which is always a good thing – and the kids will never notice! They are moist, sweet and so good delicious!

These muffins can be made in larger batches (just double the recipe) and easily frozen. To defrost and reheat, simply microwave on high for 1 minute, making them an excellent Sunday night snack or a breakfast on-the-go when there is no time for anything else.

Hidden Vegetable Apple Muffin Recipe

Makes 12

1 1/2 cups wholegrain flour
1/2 cup oats
3/4 T baking powder
1 tsp ground cinnamon
1/3 cup soft brown sugar
pinch salt
2 apples, cored and roughly chopped
1 large zucchini
handful broccoli florets
1/3 cup vegetable oil
2 large eggs, lightly beaten

Preheat the oven to 350°F.

Combine the flour, oats, baking powder, cinnamon, brown sugar and salt in a large bowl.

Combine the apples, zucchini and broccoli in a food processor until fine, and stir into the flour mixture. Add the oil and eggs and mix well to combine.

Divide the mixture into a greased 12-muffin tin and bake for 20-22 minutes. Use a toothpick to check for doneness. Remove the muffins from the oven and enjoy! They are delicious warm, spread with butter.
