This is a fantastic dessert that you can make ahead of time and the kids will love! The ingredients are easy, off-the-shelf items that require hardly any preparation.
The crunchy apples are simply drizzled with caramel and melted dark chocolate and garnished with finely grated white chocolate, so there isno shortage of sweetness running through this dessert – it will satisfy any sweet-tooth! I added toasted almonds to balance all that sweetnessout, and added the pomegranates only because it looked pretty – it certainly didn’t need it.
Shelled pistachios will also make a fantastic topping, so perhaps you could ask the kids which they would prefer, or even better – let them top their nachos as they wish.
Apple Caramel Nachos Recipe
Serves 4
Ingredients
2T sliced almonds, toasted
3 apples, cored and sliced
1/4 -inch thicksqueeze of lemon juice
1⁄2 cup store-bought caramel
1⁄4 cup dark chocolate, melted
white chocolate, grated
2 TB pomegranate seeds (optional)
Directions
Toast the flaked almonds in a hot, dry pan and keep your eye on themensuring they do not burn. Remove from the heat and set aside.
Peel and core the apples, slicing them evenly into 1⁄4-inch thick pieces. Toss in a large bowl with a squeeze of lemon juice to prevent discoloring.
Remove from bowl and pat dry. Arrange on a platter. You can complete up until this stage ahead of time, covering the platter with cling wrap and storing in the fridge.
To serve, drizzle caramel onto the arranged apples, followed by melted dark chocolate and grated white chocolate. Top with the toasted almonds (and pomegranate seeds, if you like).
*To melt chocolate, simply place in the microwave on low for about 20-25 seconds. Add a splash of double cream and stir thoroughly until well-combined and glossy. If you do not add the cream the chocolate will harden at room temperature again.
